winemaking
Grapes varieties from each vineyard were vinified separately in small volume stainless steel tanks. Destemmed bunches were cold-soaked and underwent pre-fermentation from 2 to 4 days. Alcoholic fermentation lasted 10 to 18 days at 24-27ºC with soft pump-overs each day. Then the wine was left for post-fermentation maceration, by every day tastings is decided when the wine is drained into French barrels where the malolactic fermentation takes place naturally.
Ageing
Borandes spent 17 months in new and old French barrels. By tasting, we select only the best barrels of each variety that fits according to our quality standards. After this, the wine is blended and bottled, where is kept for 3 more years before it is released to the market.
Tasting Notes
Bright and intense ruby red colour. Aromas of ripe red and wild black fruits such as blueberries and black-currant, notes of tobacco, spices, menthol, dark chocolate, and a herbal hint in the background. In the mouth, excellent balance and fresh on the palate, medium-bodied and roud tanins, a wine of great personality, complexity, and elegance with a long and pleasant finish.
